Vegan Spanakopita

Vegan spanakopita. Spanakopita or spinach pie is probably one of the best-known of all traditional Greek dishes and hands down one of the most delicious. Blend them up with some lemon juice salt non-dairy milk and garlic. Plus the instructions are already on the long side as I really want you to get it right and love it so shop-bought pastry it is.
Ill be showing how to make either a vegetarian OR a vegan version depending on your personal preferences. Blend tofu coconut oil lemon vinegar onion powder and salt in a food processor. Roll the pastry into a long roll shape.
To do this cut the sheet of filo into 3-inch x 10-inch strips. To create a phyllo-wrapped spiral spanakopita lay down one or two sheets of pastry on a clean surface. Cashews serve as the cheesy component for this vegan spanakopita.

I wanted to try and create a healthy version of this traditional Greek dish with little to no-oil and make it vegan. Start by frying your garlic and green onion in a saucepan until fragrant. Add some vinegar lemon water and salt to the cashew mixture and whizz again until it is well mixed but not yet smooth.
I used ¾ tsp of salt in mine. Vegan spanakopita is delicious and quite easy to put together if you are lazy like me and use shop-bought phyllo pastry. Spanakopita is a traditional Greek pastry also widely known as spinach pie made from layers of flaky golden phyllo dough spinach cheeses and copious amounts of butter in between.
